Rainbow Egg-Fried Rice

A great dinner option, incorporating a rainbow of vegetables therefore rich in nutrients and goodness.

Prep time: 20 minutes Cook time: 10 minutes Serves: 4


  1. Heat 1 tsp. oil and cook the eggs over a gentle heat to produce an omelette. Once cooked through, place on a cutting board and cut into strips.
  2. Heat the left over oil and add the onions. After a few minutes gradually add the other vegetables.
  3. Then add the tamari sauce, cooked rice and egg.
  4. Cook until heated through, stir well and serve.
