A nutrient rich sauce bursting with antioxidant carotenoids rich in complex carbohydrates and high in fibre. So ideal for healthy digestion and great for energy.

Works perfectly as a sauce for pasta or a topping for fish or chicken.

"I have been serving this as a pasta sauce for the past 3 years and my kids love it. We sometimes add a tablespoon of red pesto if there happens to be a jar open and I serve with a little bowl of extra grated cheese for the kids to add on top themselves. They love it so I keep a big stock in the freezer for a quick and easy tea!"

Prep time: 10 minutes Cook time: 20 minutes Serves: 4

Method

  1. Place the carrots and butternut squash in a pan of water and bring to the boil.
  2. Simmer for 15-20 minutes or until the vegetables are soft.
  3. Drain the vegetables and add them to the blender.
  4. Add the cream and blend together until the mixture is your preferred consistency.
  5. Add the cheese into the mixture and stir in or blend again.
  6. Serve mixed into pasta.You can start by using pasta stars or Orzo Pasta for weaning babies. The sauce works great with Fusilli for toddlers as they are easy to pick up and thy collect lots of sauce.
