Citrus Mango Coco Bites




This is an easy, wheat free, no bake recipe, ideal for the whole family and without nuts they are also great for packed lunches. Mangoes are high in beta-carotene and vitamin C and reputed to boost the immune system, protect eyesight and aid digestion. Coconut has a unique healthy fat content and is also high in fibre, protein, vitamins and minerals.

  1. Put all the ingredients into a blender or use a handheld blender and blend until fairly smooth and sticky.
  2. Squeeze heaped teaspoons into balls and place on parchment paper on a plate. Pop into the fridge to set.
