Cashew and Apricot Love Bites!




This is an easy, wheat free, no bake recipe, ideal for the whole family. The cashews, flax and whey powder make these bars a good source of protein, helping to slow the release of the sugar from the apricots. The apricots are rich in fibre and vitamins A, C and E, ideal for digestive health, eyes and skin.

If you're making for school lunches then swap the cashews for mixed seeds.

  1. Melt the coconut oil/butter in a pan.
  2. Blend the oats and cashew nuts to form a flour.
  3. Add the other ingredients and pulse until mix resembles breadcrumbs.
  4. Stir in the melted coconut oil.
  5. Press into a square tin lined with parchment paper.
  6. Chill in the fridge for at least an hour.
  7. Remove and cut into bars and store in the fridge.
