Apricot & Banana Almond Loaf

This is a delicious, wheat free recipe, ideal for the whole family. Sweetened naturally with apricots, banana and maple syrup. Apricots are high in fibre and contain many nutrients including vitamin C and E, zinc and copper so reputed to benefit eye and skin health.

Prep time: 10 minutes Cook time: 40 minutes Serves: 12


  1. Preheat the oven to 170˚C / 325˚F/Gas Mark 3.
  2. Line a loaf tin with baking parchment.
  3. In a blender/hand held, blend together the apricots, eggs, banana, butter, syrup and vanilla.
  4. In a bowl combine the dry ingredients and fold in the blended ingredients.
  5. Pour into the baking tin and cook for 35-40 minutes (test using a skewer for moist crumbs).
  6. Leave to cool and serve when warm or cold.
