Italian Chicken Nuggets!



Delicious and nutritious Italian chicken nuggets that children can make themselves. Rather than breadcrumbs, flavourings and preservatives these are coated in almonds, parmesan and basil.

Using almonds is a great way to increase fibre, healthy fats and vitamins and minerals, which may be beneficial for our heart health, muscles and joints.

Prep time: 10 minutes Cook time: 20 minutes Serves: 4/6 children


  1. Preheat the oven to 180°c/350°F/Gas Mark 4.
  2. Beat the egg in a bowl.
  3. Cut the chicken fillets into large chunks.
  4. Mix the parmesan, almonds and basil together.
  5. Line a baking tray with parchment paper.
  6. Dip each piece of chicken into the egg mix and then into the almond coating. Then place on the baking tray. Do this to all the pieces.
  7. Cook for 20 minutes (until starting to brown on top and cooked right through).
  8. Serve with courgetti pasta, sweet potato wedges, baby new potatoes, raw vegetables...
