Sunflower Polenta Bread

Description

A great gluten free bread recipe made from ground dried maize. A rich source of B vitamins so beneficial for nervous system support and could also support eye health. A great alternative to bread and is delicious served with soup, salad, nut butter or hummus.

Prep time: 10 minutes Cook time: 15 minutes Serves: 4/6

Method

  1. Preheat the oven to 180˚C/360˚F/Gas Mark 4.
  2. Line a small baking tray with baking parchment.
  3. Use a process or blender to grind the sunflower seeds.
  4. Combine the ground seeds, polenta, chia seeds, baking powder and chilli flakes in a bowl.
  5. Melt the coconut oil in a pan and then mix with the beaten egg and milk.
  6. Pour the wet mixture into the dry mixture and combine.
  7. Pour the mixture into the baking tray and sprinkle with seeds and cook for 15 minutes until golden brown on top.
  8. Serve with soup, salad or dips as a healthy alternative to bread.
