Mushroom & Chestnut Soup



A deliciously filling soup rich in flavours that packs a powerful punch for immunity and digestive health.

Chestnuts contain the least amount of fat compared with other nuts but are high in fibre, beta-carotene, folate and vitamin C. They taste great with mushrooms, which are known to have anti-inflammatory and antibacterial effects so great for boosting immunity.

  1. Melt the coconut oil in a pan and soften the celery.
  2. Add the mushrooms and stir for a few minutes before adding the water to cover and stock.
  3. Leave to simmer for 10 minutes, add the chestnuts and simmer for a further 5 minutes.
  4. Blend using a handheld blender until smooth.
  5. Add enough milk for a smooth consistency, warm through and serve with parsley/mushrooms/olive oil.
