Hazelnut and Honey Cookies

Delicious gluten-free cookies rich in antioxidants and high in monounsaturates, which help to protect the heart and lower LDL cholesterol levels. Also contains B vitamins, vitamin E and K so great for healthy skin, hair, connective tissue and to protect cells from damage.

Prep time: 20 minutes Cook time: 10 minutes Serves: 10


  1. Pulse the hazelnuts in a blender/food processor until you form breadcrumbs.
  2. Add all the ingredients and mix well into a dough.
  3. Pop into the fridge for 10 minutes to chill.
  4. Preheat the oven to 180°c/350°F/Gas Mark 4.
  5. Once chilled, roll the dough between 2 sheets of parchment paper/Clingfilm until 1 cm thick and use a cutter to produce your cookies.
  6. Place each cookie onto a baking tray lined with parchment paper and bake in the oven for 10 minutes.
