Description

This ‘healthy’ version of a Millionaire Shortbread using date caramel is a real hit with both adults and children. This recipe is gluten free as the base it made of oats and coconut oil. The usually sugary caramel is made using dates, coconut oil and vanilla so there’s plenty of beneficial fats and soluble and insoluble fibre bringing greater digestive health benefits but also still tasting delicious. The melted chocolate adds to the taste and makes this a delicious ‘lower’ sugar treat than many of those shop brought versions!

Method

Base
  1. Pulse oats in food processor into a flour mix.
  2. Combine the coconut oil, oat mix and maple syrup.
  3. Press into a square baking tin and put into the freezer to set.
Filling
  1. Drain the dates and add the water, vanilla and coconut oil. Pulse in a food processor until smooth.
  2. Pour the filling on top of your base and return to the freezer.
Topping
  1. Melt the chocolate in a bowl over a saucepan of boiling water.
  2. Stir in the coconut oil (stops it cracking when you cut it) and then pour over the frozen mix.
  3. Leave to set and cut into squares.
