I use dates and banana to sweeten these delicious chocolate brownies and opt for gluten free flour. They are a real treat and work brilliantly for birthday parties or celebrations.
Prep time: 15 minutes Cook time: 30 minutes Serves: 12
8 oz soft dates
4 oz butter
1 egg (beaten)
1 ripe banana, mashed
1tsp vanilla extract/vanilla paste
4 oz dark chocolate
2 tsps. baking powder
3 oz plain flour (gluten free)
Decorate: 4 oz dark chocolate and almonds/walnuts (optional)
Put dates in a saucepan, add boiling water to just cover, then use a blender/hand blender to puree.
Mix in and then blend together the butter, egg, banana & vanilla.
Melt the chocolate and add to the mix.
Using a metal spoon fold in the flour & baking powder.
Pour the mix into a tin (approx. 22cm x 22cm) lined with parchment paper.
Bake in the oven at 180˚C / 350˚F / Gas Mark 4 for 30 minutes.
Once cool add melted chocolate to top and sprinkle with chopped walnuts/flaked almonds.
