Preheat the oven to 180°C/350°F/Gas Mark 4..
Combine all the ingredients in a blender/food processor and pulse until combined and sticky.
Place 8 dessertspoon balls of mix onto a lined baking tray and cook in the oven for 20 minutes.
Drain the dates and add the water, vanilla and coconut oil. Pulse in a food processor until smooth.
Serve with hummus/tahini dressing (1tsp tahini, 1 tbsp. olive oil, 1 tbsp. lemon juice) and salad/roast vegetables.
