Description

A simple falafel recipe that’s packed full of flavour and goodness. Beetroots are beneficial for the liver and alongside the chickpeas can support cardiovascular health and may also reduce levels of LDL cholesterol.

Prep time: 10 minutes Cook time: 20 minutes Serves: 4

Method

  • Preheat the oven to 180°C/350°F/Gas Mark 4..
  • Combine all the ingredients in a blender/food processor and pulse until combined and sticky.
  • Place 8 dessertspoon balls of mix onto a lined baking tray and cook in the oven for 20 minutes.
  • Drain the dates and add the water, vanilla and coconut oil. Pulse in a food processor until smooth.
  • Serve with hummus/tahini dressing (1tsp tahini, 1 tbsp. olive oil, 1 tbsp. lemon juice) and salad/roast vegetables.
