Description

This is a super, simple nut-free soft bite cookie perfect for snacks, packed lunches and picnics.

Made with oats which are a slow release carbohydrate and easy to digest. The dates and banana provide a natural sweetness so no need for any added sugar.

Prep time: 5 minutes Cook time: 12-15 minutes Serves: 15 Cookies

Method

  1. Preheat the oven to 180˚C / 350˚F / Gas Mark 4.
  2. Line a baking tray with parchment paper.
  3. Blend the dates, banana, vanilla, coconut, cinnamon, baking powder and nutmeg.
  4. Stir in the oats and choc chips.
  5. Spoon dessertspoons onto the baking tray and sprinkle with seeds.
  6. Bake in the oven for 12 minutes until golden around the edges.
  7. Leave to cool slightly.
