Apple and Cinnamon Cake



A simple autumnal gluten free treat sweetened naturally with the apple and honey.

Prep time: 20 minutes Cook time: 35-40 minutes Serves: 8


  1. Preheat the oven to 180°c/350°F/Gas Mark 4.
  2. Blend the oats until fine like flour.
  3. Combine the oats, flour, ground almonds, baking powder and cinnamon.
  4. Melt the coconut oil and blend for a few minutes with the eggs and honey. Add to the flour mix.
  5. Line a cake tin with baking parchment. Add a third of the mix spreading to cover the tin.
  6. Add slices of apple until covered.
  7. Then add another layer of mixture and then another layer of apple slices, repeat.
  8. Top with flaked almonds.
  9. Bake for 35-40 minutes.
  10. Serve wtih yoghurt and cinnamon.
