Jerusalem Artichoke and Mushroom Soup

Description

Jerusalem artichokes are a root vegetable from South America and are only available from November to March. They are a great food for digestive health. Rich source of which feeds beneficial bacteria in the intestines, which is why they’ve been given the nick name fartichokes!

Prep time: 10 minutes Cook time: 30 minutes Serves: 4

Method

  1. Cover and soak the porcini mushrooms in hot water.
  2. Heat the oil in a pan and cook the onions and garlic until soft.
  3. Add the sliced mushrooms and cook for a few minutes.
  4. Add the artichokes, water, stock and drained mushrooms. Simmer for 30 minutes until artichokes are soft.
  5. Blend until smooth.
  6. Serve with parsley.
