A great gluten free recipe, which is high in protein and low in sugar. Works well as a snack or a breakfast. Made with nuts as the base so also rich in essential fatty acids beneficial for brain health, skin and immunity.

Prep time: 10 minutes Cook time: 35 minutes Serves: 8


  1. Preheat the oven to 180˚C / 350˚F / Gas Mark 4.
  2. Place a piece of baking parchment into a loaf tin.
  3. Blend the nuts to form a flour like mix. Pour into a bowl and add the other dry ingredients.
  4. In the blender, blend the other ingredients and pour into the dry mix combining well.
  5. Pour into the loaf tin and bake for 30-35 minutes.
